Regional cuisine that is simply delicious
The meat of the Swabian-Hall swine is dark red in colour and well marbled. It is characterised by a robust and firm structure. The pure-bred animal is resistant to stress, which is the reason for its good meat quality: The meat hardly reduces nor does it release much water when prepared in the pan.
New York in Stuttgart
From the Swabian Alb region, we offer burgers made with meat from the Albbüffel (“Alb buffalo”). Our pastrami sandwiches are prepared using the original New York recipe, since Martha’s butcher has lived and worked in New York for many years before returning to the Swabian Alb.
